PRIMARY PURPOSE
The role of the Child Nutrition Dietitian is to be responsible for all menu planning and analysis for breakfast, lunch and snack programs and assist in the supervision of the Child Nutrition Department.
QUALIFICATIONS
Degree in Dietetics or Nutrition Registered Dietitian Experience in menu planning, food purchasing, food production records and merchandising in a child nutrition setting Capable of working well with others
MAJOR RESPONSIBILITIES AND DUTIES
  • Prepare menus for the breakfast, lunch, and after school care programs following
USDA & TDA
Guidelines.
  • Assist in the supervision of the Child Nutrition Department.
  • Prepare menus for students on special diets.
  • Coordinate inventory supplies with menu preparation.
  • Work with all Child Nutrition managers to order correct amount of weekly menu supplies.
  • Coordinate central storage inventory.
  • Check all monthly commodity deliveries against USDA allocations for accuracy.
  • Prepares all bid specifications for food items.
  • Develops and maintains recipes to ensure quality, standardization and consistency.
  • Coordinates with and cafeteria managers in adjusting recipes to meet dietary guidelines and compliance with USDA and TDA guidelines.
  • Plan training activities on menu planning, safety, sanitation, nutrition, HACCP and TDA guidelines for Child Nutrition personnel.
  • Monitor compliance with
USDA & TDA
policies and procedures.
  • Visit campuses to ensure compliance with USDA and TDA policies.
  • Coordinate with ECISD Health Services staff regarding special diet modifications or concerns.
  • Conduct nutrition education activities as needed.
  • Monitor summer Food Service Program.
  • Prepare and update required records such as food production records, temperature logs, etc.
  • Performs all duties in a safe manner to avoid injury to oneself and/or to others.
  • Performs other related duties as assigned.
SUPERVISORY RESPONSIBILITIES
  • Supervises the Child Nutrition cafeteria managers and cafeteria staff.
