Job Description

Fog City Foods (a division of Draeger's Supermarkets) is seeking a Pastry and Cake Baker for our production kitchen. This position also includes decorating and finishing products. This position reports to the Bakery Manager(s) and Bakery Director.
Wage:
$23.00 to $27.00 per hour, depending on experience.
Expected hours:
24 - 40 per week.
Job Summary:
At Fog City Foods, we are dedicated to crafting exceptional pastries and cakes, distributing them to 2 locations on the peninsula, and 1 location in the East Bay. As a Pastry and Cake Baker in our production kitchen, you will be responsible for preparing and baking a variety of pastries, cheesecakes, fruit tarts, mousses, cupcakes, and cakes according to our recipes and standards. You will work closely with our team to ensure that each product meets our quality expectations and is delivered on time. Key Responsibilities (including but not limited to):
Pastry and Cake Production:
Prepare and bake pastries, cakes, and other baked goods according to recipes and production schedules.
Ingredient Management:
Measure and mix ingredients accurately, and maintain inventory of baking supplies. Weigh out/measuring precise amount of baking ingredients using scales or graduated containers. Assess the quality of raw materials before baking to ensure conformance to set standards. Uniformly mix ingredients using automated equipment such as blenders and mixers. Knead dough manually or with the aid of a kneading machine. Maintain good knowledge of complex industrial mixing machines and their operation. Follow existing recipes closely to ensure that products meet company standards for taste, texture, and appearance and are produced consistently with high level of attention to detail. Maintain a clean and hygienic work area in accordance with health and safety regulations and Good Manufacturing Processes (GMPs). Understands, follows and enforces all established safety, health, quality GMP and Company policies, procedures and recognized practices. Monitoring ovens, stoves, or other equipment used to bake products. Ensure proper storage of baking utensils and supplies. Works with colleagues as a team; maintains a positive attitude and a willingness to help others. Performs other duties as required or assigned.
Qualifications:
Proven experience as a pastry and cake baker in a production or professional kitchen setting. Strong knowledge of baking techniques, ingredients, and equipment. Ability to follow recipes and adjust as needed. Ability to follow recipes and baking procedures precisely. Ability to employ knowledge of math in weighing and mixing precise quantity of ingredients. Ability to stand for long periods, lift heavy items, and perform physically demanding tasks. Excellent sense of smell and taste. Attention to details - closely monitor baking process to ensure final products meet set standards. High school diploma or equivalent required; culinary school training or relevant certifications are a plus. Serv-Safe Food Handler certification required. 2-5 years of baking experience required. (Knowledge of sweet and pastry baking.) Availability to work various shifts including overtime, weekends as needed, early morning shift (example: 5:00 am to 1:30 pm). Creative, detail-oriented, and able to work efficiently in a fast-paced environment.
