Job Description

Position Summary The Head Baker / Kitchen Manager is responsible for overseeing the daily production of cannabis-infused baked goods in a licensed cannabis manufacturing facility. This role ensures all products are produced according to standardized recipes, potency requirements, food safety standards, and state cannabis regulations. This position leads kitchen staff, manages production schedules, oversees ingredient handling, and ensures strict adherence to Standard Operating Procedures (SOPs). Strong baking knowledge, leadership, and attention to detail are critical, especially when it comes to measurement accuracy and dosing calculations. Key Responsibilities Production Oversight Oversee daily production of cannabis-infused baked goods based on production schedules Prepare and bake products following standardized recipes and SOPs Ensure consistency in product quality, texture, appearance, and portioning Monitor workflow to meet production targets efficiently Verify proper baking, cooling, cutting, and packaging procedures Cannabis Dosing & Potency Control Ensure proper use of cannabis-infused ingredients per approved dosing procedures Accurately calculate dosing requirements for batches Verify measurement of infused ingredients using certified kitchen scales Implement dual-verification processes when required Ensure finished products meet potency targets Certified Scale Use & Measurement Ensure all ingredients are measured using approved digital scales Verify scale calibration and functionality Train staff on proper weighing procedures Maintain accurate weight-based recipe adherence Cannabis Compliance & Chain of Custody Maintain proper chain-of-custody procedures for cannabis materials Ensure proper storage, handling, and documentation Maintain separation between infused and non-infused ingredients when required Complete batch production and compliance documentation accurately Quality Control & Batch Verification Verify all batches follow approved recipes and dosing procedures Review ingredient measurements and batch prep steps Oversee batch verification to meet quality and potency standards Monitor finished products for consistency Identify and report any deviations or inconsistencies Support corrective actions when needed Staff Supervision & Training Supervise and train bakery production staff Ensure adherence to SOPs, sanitation, and compliance standards Train new employees on procedures and safety requirements Maintain a professional and productive kitchen environment Inventory & Ingredient Management Monitor inventory levels for ingredients and supplies Assist with ordering and tracking Ensure proper storage conditions Report discrepancies or shortages Food Safety & Sanitation Maintain strict food safety and sanitation standards Ensure compliance with GMP guidelines Implement allergen control procedures Oversee cleaning schedules Maintain active food safety certification Documentation & SOP Compliance Maintain production logs and batch records Ensure all work aligns with SOPs Report equipment issues or compliance concerns Assist in updating SOP documentation Security & Restricted Access Follow all facility security procedures Ensure cannabis materials remain in authorized areas Restrict access to authorized personnel only Report any security concerns immediately Required Qualifications Must be 21 years or older Strong attention to detail and accuracy Ability to follow detailed SOPs Basic math skills for recipe scaling and dosing calculations Ability to measure ingredients accurately using digital scales Ability to work in a structured production environment Must maintain compliance with cannabis and food safety regulations ServSafe Food Protection Manager Certification (or obtain upon hire) Must obtain and maintain a valid MED Occupational Badge Preferred Qualifications 1-3 years of experience in baking, pastry, or food production Experience working with standardized recipes or batch production Experience in regulated industries (cannabis, food manufacturing, pharma) Supervisory or leadership experience Physical Requirements Ability to stand for extended periods (8+ hours) Ability to lift up to 50 lbs Ability to perform repetitive tasks (mixing, portioning, packaging) Comfortable working in a warm kitchen environment Work Environment Licensed cannabis manufacturing kitchen operating under strict regulatory requirements.
