Job Description

Bohemia Bake Shop is more than just a bakery; it's a nonprofit community hub focused on supporting our region's small scale producers and bakers. We specialize in artisanal sourdoughs, laminated pastries, and unique, rustic treats. We are looking for a Lead Baker who is passionate about their craft, obsessed with dough hydration, and ready to lead a small, dedicated team in a fast-paced, aromatic environment. As the Lead Baker, you are the heartbeat of our kitchen. You will oversee the daily production of all baked goods, ensuring every loaf and croissant meets our "Bohemia Standard." This is a working lead role—you'll be on the floor, flour on your apron, guiding the team through the morning bake while managing schedules, inventory, and R&D.
Key Responsibilities Production Leadership :
Manage the daily bake schedule, ensuring all products are finished to perfection and ready for opening.
Quality Control :
Maintain strict standards for taste, texture, and visual appeal across all bread and pastry lines.
Team Management :
Train, mentor, and schedule a small team of bakers and assistants. Lead by example in speed, cleanliness, and technique.
R&D & Innovation :
Collaborate with ownership to develop seasonal menus specials.
Inventory & Ordering :
Manage ingredient stock, minimize waste, and coordinate with local suppliers.
Kitchen Safety :
Ensure the bakery exceeds all health and safety regulations and maintains a pristine workspace.
Qualifications Experience :
2+ years in a professional bakery, with at least 1 year in a supervisory or lead role.
Technical Skills :
Deep understanding of sourdough fermentation, high-hydration doughs, and laminated pastries (croissants, danishes).
Early Bird Mentality :
You thrive on early morning shifts (e.g., 3:00 AM
  • 11:00 AM).
Problem Solver :
Ability to adjust recipes on the fly based on humidity, temperature, or equipment quirks.
Physical Stamina :
