Job Description

Bread baker is responsible for preparing and baking a variety of bread products, ensuring they meet quality standards and are delivered fresh to customers. This role requires expertise in baking techniques, precise measurements, and an understanding of dough fermentation processes.
Key Responsibilities:
Bread Production:
Prepare and weigh ingredients according to established recipes, ensuring accuracy and consistency. Mix, knead, and shape dough to create different types of bread, including artisan bread, baguettes, rolls, and specialty loaves. Monitor fermentation and proofing processes to achieve optimal texture and flavor. Operate baking equipment, such as ovens, mixers, and dough sheeters, ensuring proper temperature and baking times. Create and maintain a production schedule to ensure an adequate supply of fresh bread throughout the day. Collaborate with the bakery team to develop new bread recipes and seasonal offerings.
Quality Control:
Follow standardized recipes and quality guidelines to consistently produce high-quality bread. Conduct regular quality checks, such as visual inspections, to identify and rectify any deviations from quality standards. Ensure proper storage and rotation of ingredients to maintain freshness and minimize waste. Monitor baking equipment and promptly report any malfunctions or maintenance requirements. Maintain cleanliness and sanitation standards in the baking area, adhering to food safety regulations.
Inventory Management:
Monitor inventory levels of baking ingredients and supplies, placing orders as needed. Receive and inspect incoming ingredients, ensuring they meet quality standards. Maintain organized storage areas and proper labeling of ingredients for easy identification.
Team Collaboration:
Communicate and coordinate with other bakery staff to ensure smooth operations and timely production. Assist in training new bakery employees on baking techniques, equipment operation, and safety procedures. Collaborate with culinary director to develop complementary bread products for menus or events. Contribute to a positive work environment by fostering teamwork, respect, and open communication.
Qualifications and Skills:
Proven experience as a bread baker, demonstrating proficiency in bread-making techniques and processes. Strong knowledge of ingredients, measurements, and baking formulas to produce consistent results. Understanding of dough fermentation, proofing, and shaping techniques. Familiarity with various bread types, including artisan bread, sourdough, whole wheat, sandwich rolls, and gluten-free options. Ability to operate and maintain baking equipment, such as ovens, mixers, and proofing cabinets. Ability to safely lift 40 or more pounds. Knowledge of food safety and sanitation regulations to maintain a clean and hygienic work environment. Excellent time management and organizational skills to meet production schedules and handle multiple tasks simultaneously. Strong attention to detail and quality control to ensure consistent product. Effective communication and teamwork abilities to collaborate with other bakery staff.
