About UsWorking Man Bread Co. is a small wholesale bakery in Fredericksburg making naturally leavened, clean ingredient breads for restaurants, butchers, grocers, and families. We focus on long fermentation, real ingredients, and consistent, honest bread.

We re looking for a shift baker, not a head baker. This role is for someone who likes clear direction, small teams, and the rhythm of production baking.

The RolePart time shift baker to help run production:
Schedule:
Once trained: Tue, Wed, Thu, Sat 6:00 am to 12:00 pm(Guaranteed 24 hours/week and more once proficient)Work independently or with one other baker once trainedExecute a daily production sheet: scaling, mixing, fermenting, shaping, baking, and basic cleanupHandle naturally leavened and enriched doughs with care and consistencyYou ll get clear, written instructions and standards. Once you re trained, you ll be trusted to execute on your own.

ResponsibilitiesScale and mix doughs according to formulas and production sheetsManage fermentation, shaping, and proofing for sourdough and enriched breadsBake to consistent standards of color, texture, and crumbKeep your station clean, organized, and food safe as you workCommunicate clearly about timing, issues, and any product that doesn t meet standardWho This Is ForYou enjoy early mornings and being done by middayYou re comfortable working by yourself or with one other person no big crewsYou like having clear instructions, then being left alone to executeYou re patient and detail oriented: you care about fermentation, shaping, and consistency and can learn how to adapt dough treatment based on visual and tactile indicatorsYou take pride in doing reps wellMinimum RequirementsPlease read carefully this will be screened:

At least 1 year of professional kitchen or bakery experience (bakery, restaurant, hotel, commissary paid, not just home baking)Hands on experience with bread or dough (not only cakes and cookies): mixing, shaping, or bakingAble to work Tue, Wed, Thu, Sat from 6:00 am 12:00 pm on a consistent basisAble to lift 50 lb flour bags and be on your feet for a full shiftIf your experience is only home baking and you ve never worked in a commercial kitchen, this role isn t the right fit yet.
Pay & GrowthPay:
