Job Description

The Pizza Dough Baker is responsible for producing large volume pizza dough, including mixing, portioning, proofing, saucing, cheesing, and par-baking, while maintaining organization, efficiency, and cleanliness. This position will report directly to the Store Manager. This position requires open and weekend availability. The schedule we're looking to fill is Thursday-Monday.
Essential Duties and Responsibilities:
Capable of working a variety of shifts, as needed, including opening, mid and close.

Drive excellence in day-to-day service; collaborate and support other Team Members; focus on problem solving/process improvement; set standards.

Lead by example - be a culture champion and live by Ranch principles.

Following Ranch procedures and processes- mix, monitor, and manage the dough to be fermented and proofed overnight for the following day or up to 2 days; weigh, portion, and shape dough for the par-baking process for all pizzas, breadsticks, and blanks for breadcrumbs. Par-bake pizzas to be used later to fulfill orders. Perform light prep work utilizing knife skills, including slicing cheese (using meat/cheese slicer), grating cheese, and mixing sauce. Perform daily sidework, including set up, upkeep, and cleanup of work areas.

Properly and safely use equipment and tools (e.g. dishwasher, mixer, meat/cheese slicer, ovens, etc.). Adhere to FIFO (first in first out) rotation, paying special attention to near expiration and expiration dates. Promptly report any issues. Maintain cleanliness, sanitation, and organization of all work areas. Properly and promptly empty trash and take it to the appropriate trash area. Consistently check, restock, and maintain par levels during shifts.

Maintain the proper standards of personal appearance, hygiene, and grooming.

Daily use of food prep and par guides as set by restaurant procedures.

Assists in food prep assignments during off-peak periods as needed.

Substitute or assist other Team Members during emergencies or as needed.

Opens the kitchen following the opening checklist for kitchen stations and assists others in opening the kitchen.

Closes the kitchen following the closing checklist for kitchen stations and assists others as needed.

Participate in daily, weekly and monthly cleaning tasks and projects as directed by the Store Manager or cleaning schedules.

Coordinate with and assist other Team Members to meet restaurant needs.

Fill-in for fellow employees where needed to ensure guest service standards and efficient operations.

Responsible for following restaurant freight receiving policies.

Perform and complete additional duties assigned.
