MHKC OVERVIEW
Mt. Hood Kiwanis Camp (MHKC) is a nonprofit organization dedicated to empowering individuals with developmental disabilities through equitable access to outdoor recreation. Our primary program, Summer Camp, operates from June through August and serves over 500 campers at our 22-acre camp in the Mt. Hood National Forest. Campers at MHKC have a wide range of abilities and support needs. Program and care staff provide daily living support, and campers participate in a variety of adaptive and accessible activities, including an adventure course, horseback riding, swimming, biking, and hiking. Summer Camp is intentionally designed to promote independence, joy, skill development, and meaningful community connections. While kitchen staff are not responsible for camper care or activity support, understanding the broader camp environment is an important part of working at MHKC. The kitchen plays a vital behind-the-scenes role in camp operations by providing nutritious meals that support campers' health, safety, and individual dietary needs. Kitchen staff are essential partners in creating a positive, consistent, and welcoming camp experience. MHKC is committed to maintaining a safe, equitable, and inclusive workplace. POSITION SUMMARY
The Dishes/Dining Hall Assistant is a key member of the Kitchen Team, responsible for maintaining cleanliness and sanitation in the kitchen, dining hall, dishwashing area, and loading dock. There may be opportunities to assist in meal preparation and ensure that meals meet dietary needs such as gluten-free, dairy-free, vegetarian, and vegan options. As part of a collaborative and flexible team, the Dishes/Dining Hall Assistant will contribute to creating a positive dining experience for campers, staff, and guests. In addition to your kitchen duties, you'll have the opportunity to connect with campers and staff outside of mealtimes, contributing to the camp's supportive and inclusive community. This position reports directly to the Head Chef and offers the option to live on or off-site. The Dishes/Dining Hall Assistant must be adaptable, enjoy working in a team setting, and demonstrate a commitment to the care and wellbeing of the Camp community. This position also works alongside another team member with the same title.
ESSENTIAL FUNCTIONS
1.
Dining Hall Preparation Maintaining Cleanliness:
Ensure breakfast/salad bar table, coffee station, and other food service surfaces are consistently neat and clean, creating a welcoming environment.
Restock Supplies:
Regularly restock coffee station supplies including creamer, honey, sugar, hot chocolate, tea, straws, etc.
Table Setting:
Ensure plate, cups, utensils needed for table setting are readily available.
Stock Napkins and Condiments:
Keep napkins and condiments at each table fully stocked.
Sanitize Tables:
Regularly sanitize dining tabled to maintain hygiene standards.
Monitor Temperatures:
Record the temperatures of all refrigerators and freezers in the dining area daily at the beginning of each day to ensure food safety.
Garbage Management:
Empty garbage bins twice a day (lunch and end of day) to maintain cleanliness.

KP Equipment Collection:
Collect and wash equipment at the camper food preparation table
Weekley Cleaning:
Wipe down the inside and outside of all refrigerators, microwaves, and outside of toasters at the end of each week.
Floor Maintenance:
Sweep under the breakfast/salad bar and coffee station at the end of each meal, and sweep and mop the dining hall and bathroom after lunch each day. 2.
Kitchen and Equipment Sanitation Dish Bussing:
Efficiently bus dishes and dish carts from the dining area to the dish pit throughout meals.
Dishwashing:
Wash all dishes, camper devices, serving and preparation equipment, and utensils according to regulated washing methods and temperatures.
Storage:
Put away clean and dried dishes in their designated areas.
Dish Pit Maintenance:
Keep the dish pit clean and organized, emptying the food trap and wiping down all surfaces after each meal.
Loading Dock Maintenance:
Clean and maintain the loading dock in a safe and organized manner, including managing the cardboard pile.
Waste Management:
Reduce waste, reuse items, and recycle according to the camp's procedures to promote sustainability.
Sanitizer Monitoring:
Record sanitizer temperature at the beginning of each meal to ensure proper sanitation.
Inventory Management:
Assist in keeping track of kitchen inventory and notify the kitchen manager when supplies are running low. 3. Team Collaboration a.
Support Team Members:
Assist in maintaining the cleanliness and safety of food services, and support and instruct staff, campers, and kitchen staff as needed, fostering a collaborative work environment. b.
Customer Service:
Understand the kitchen's role in providing exceptional customer service to all camp attendees, including staff, counselors, campers, and guests. c.
Food Preparation Assistance:
May assist in food preparation tasks as directed by the team. d.
Training:
Participate in training sessions to stay updated on food safety and sanitation practices. e.
Emergency Procedures:
Be familiar with emergency procedures and protocols in case of accidents or health issues in the dining area.
EDUCATION, EXPERIENCE, & SKILLS
Experience or interest in working in a kitchen in a close-knit camp community. Knowledge of, experience in, or willingness to learn all aspects of food service: family-style service, buffet service, food safety, health regulations, and use/maintenance of commercial kitchen equipment. Effective communication skills with a variety of individuals, including co-workers, supervisors, and customers. Ability to lift and move supplies weighing up to 50 lbs., and to stand and balance for long periods of time. Willingness to live onsite or commute daily.
REQUIREMENTS
Must be 16 years of age or older Have a valid Oregon Food Handler's Certification and Adult First Aid and CPR certification, or be willing to obtain. Willingness to submit and pass a background check in accordance with MHKC, American Camp Association (ACA), and Department of Human Services (DHS) guidelines.
