Lepe's Foods has proudly served the Santa Rosa community since 1991, specializing in premium cuts of meat, poultry, and seafood. As a USDA-certified facility, we are committed to providing quality and sustainable products.
Position Overview:
We are seeking a skilled butcher with experience breaking down carcasses to join our USDA processing team. The ideal candidate will have excellent knife skills, attention to detail, and the ability to work efficiently while following strict food safety standards. You'll be on the cutting floor handling beef, pork, and poultry from primal to portion. Wholesale orders, custom cuts for retail customers, and processing work for people who bring us their own animals — the mix changes daily, which is what makes it interesting. A typical day means breaking down subprimals to spec, running the band saw and grinder, portioning to customer weights, and keeping your station clean and USDA-compliant.
Responsibilities:
Break down primals and sub-primals — beef, pork, poultry Trim, portion, and cut to customer specification for wholesale and custom orders Operate band saws, grinders, tenderizers, and slicers safely Grind, mix, and portion product to spec Maintain yield standards and minimize waste Support and train less experienced production staff Keep a clean, organized, USDA-compliant workstation Follow all HACCP, USDA, and food safety protocols
Requirements:
2+ years of butchering or meat cutting experience (retail, wholesale, or processing) Strong knife skills and knowledge of primal breakdown Understands yield and why it matters Able to work in a refrigerated environment (35-45°F) Capable of lifting up to 75 lbs and standing for long periods Reliable and punctual Bilingual (Spanish/English) preferred but not required
