Full Job Description Butcher Overview:
Join our culinary team as a skilled Butcher. We are seeking a dedicated and experienced butcher who is passionate about quality meats and can ensure that our guests receive the highest standard of food. The ideal candidate will have a keen eye for detail, excellent knife skills, and a commitment to maintaining a clean and safe work environment.
Essential Functions and Responsibilities:
Cut, trim, and prepare various types of meat, including beef, pork, poultry, and fish, according to restaurant specifications Ensure all meat products are of high quality, fresh, and properly stored Maintain a clean and organized work area, including proper sanitation and storage of tools and equipment Follow all health and safety regulations, including proper handling and disposal of waste Collaborate with the kitchen team to ensure that meat products are used efficiently and effectively Monitor inventory levels and place orders for meat and supplies as needed Provide guidance and training to junior kitchen staff on meat handling and preparation techniques Assist with menu development by providing input on meat selections and portion sizes Handle customer inquiries and special requests regarding meat products
Qualifications:
Proven experience as a butcher in a restaurant or similar setting Excellent knife skills and knowledge of meat cutting techniques Strong understanding of food safety and sanitation practices Ability to work in a fast-paced environment and handle multiple tasks simultaneously Attention to detail and commitment to quality Strong communication and teamwork skills Physical ability to lift heavy items and stand for extended periods Culinary training is a plus
Physical Requirements:
Ability to lift, carry, and move heavy items, including large cuts of meat, weighing up to 50pounds Prolonged periods of standing and walking during shifts Ability to perform repetitive cutting and trimming motions with precision and accuracy Manual dexterity and hand-eye coordination for using knives, cleavers, and other cutting tools Ability to work in cold environments, such as refrigerators and freezers, for extended periods Strong physical stamina to handle the demands of a fast-paced work environment Ability to bend, stoop, and reach to perform tasks and retrieve items Good vision and attention to detail to ensure meat quality and safety standards.
