This is not simply a meat-cutting position. We are looking for someone who can lead the department, drive sales, maintain exceptional standards, and create an engaging customer experience.
THE ROLE
The Lead Butcher will be responsible for the overall operation, presentation, organization, and growth of our butcher shop while also serving as an Assistant Store Manager and contributing to the success of the entire market.
Responsibilities include:
Take ownership of the daily operation of the butcher shop Maintain an exceptionally clean, organized, attractive, and well-stocked department Cut, prepare, portion, package, merchandise, and display meat and seafood products Maintain proper inventory levels and a strong in-stock position Monitor ordering, product rotation, freshness, shrink, and waste Develop attractive displays and merchandising that encourage customer purchases Help identify opportunities to increase butcher shop sales and profitability Understand and merchandise complementary retail products related to meat and seafood, including sauces, seasonings, marinades, specialty grocery items, and other accompaniments Assist customers with selecting products, preparation methods, cooking techniques, portioning, and menu ideas Learn and confidently sell unique proteins, specialty cuts, seafood, and products customers may not find at a traditional grocery store Educate customers and staff about new and specialty products Help create a butcher counter where customers come specifically for knowledge, service, quality, and products they cannot easily find elsewhere Support overall store operations and management as an Assistant Store Manager
WHO WE'RE LOOKING FOR
The right person is knowledgeable, organized, personable, sales-minded, and takes pride in their department.
You should have:
Professional butcher, meat department, or comparable meat/seafood experience Strong knowledge of meat cuts, preparation, handling, storage, and merchandising Knowledge of seafood is strongly preferred Strong food-safety, sanitation, and organizational standards Retail experience and an understanding of inventory and merchandising The personality and communication skills to engage and educate customers The ability to lead by example and take responsibility for a department without constant supervision An interest in specialty foods, unique proteins, new products, and culinary trends A genuine desire to build sales and grow the department Open availability , including weekends and holidays as business needs require
THIS POSITION IS FOR SOMEONE WHO WANTS OWNERSHIP

We want someone who looks at the butcher shop as their department — someone who notices when a display needs attention, when an item needs to be reordered, when a new product could sell, when a customer needs guidance, and when there is an opportunity to make the department better. Haddon Culinary is a chef-driven specialty market offering prepared foods, catering, butcher and seafood selections, specialty grocery, bakery, and more. Our goal is to offer products and a level of personal service that customers cannot get from a conventional supermarket. Pay:
$22.00 - $25.00 per hour
