N/A Summary of Position The Big Game Hunt Butcher is responsible for processing and preparing wild game animals brought in by hunters. This includes the skilled breakdown of large game animals such as elk, deer, bear, and other wild and domestic animals, into high-quality cuts of meat. The Big Game Hunt Butcher must ensure proper handling, storage, and processing of the meat, while adhering to safety, cleanliness, and health regulations. A successful candidate will have a strong knowledge of butchery techniques, an understanding of game anatomy, and attention to detail. Essential Duties and Responsibilities include the following and are subject to change at management's discretion: Skillfully break down large game animals into primal and subprimal cuts. Trim, bone, and prepare cuts of meat according to customer specifications, ensuring maximum yield and quality. Prepare specialty cuts, sausages, and ground meat as requested by customers. Properly package and label meat for storage and customer pick-up. Ensure proper chilling, hanging, and storage of game animals prior to butchering. Ad to health and safety regulations for handling and storing raw meat, maintaining correct temperatures and sanitary conditions. Monitor and ensure that all equipment used is sanitized and in good working order. Inspect game carcasses for quality and freshness before processing. Ensure that any spoilage or issues with the meat are identified andmunicated to management. Maintain a high standard of cleanliness and professionalism in all areas of the butchery. Communicate with hunters and customers to understand their preferences and provide expert advice on meat cuts, cooking methods, and preparation. Ensure customer satisfaction by meeting specific requests for custom cuts, sausages, and specialty preparations. Assist with packaging and delivering the finished product to customers in a timely manner. Safely operate butchery tools and equipment such as knives, saws, grinders, and vacuum sealers. Maintain a clean andanized workspace, adhering to all safety protocols to prevent injury. Regularly inspect and clean butchery equipment, reporting any maintenance needs to management. Assist with tracking and managing inventory of game animals, cuts of meat, and supplies such as packaging materials. ensure accurate records of processed animals and customer orders. Supervisory Responsibilities T are no supervisory responsibilities for this position. Formal butchery training or certification is a plus. 2-4 years of experience in butchering, particularly with large game animals, or equivalent experience in a professional butchery or processing facility. Strong knowledge of game anatomy and butchery techniques specific to wild game animals. Proficiency in using butchery equipment, such as knives, saws, grinders, and slicers. Familiarity with health, safety, and food handling regulations, especially in processing wild game meat. Excellent attention to detail and manual dexterity. Strong customer service skills and the ability tomunicate clearly with hunters and customers. Physical Demands The physical demands described are representative of those that must be met by a team member to successfully perform the essential duties of this position. While performing the duties of this position, the team member is frequently required to stand, walk, use hands, to finger, handle or feel, reach with hands and arms, stoop, kneel, crouch, or crawl, talk or hear. Must be able to use hand heldmunications devices. The team member must occasionally lift and/or move up to 65 pounds. The team member must be able to stand for several hours. Work Environment The work environment characteristics described are representative of those a team member encounters while performing the essential functions of this position. The noise level in the work environment is loud. The team member will be exposed to a second-hand smoke-filled environment. The team member may be exposed to biohazardous fluids such as blood and other body fluids. The team member may be exposed to hostile environments with guest.
