Job Description

The Butcher's Pantry & Restauant is seeking a Skilled Butcher to join our team in Solon, OH. We are unique in that we have onsite butchering, a restaurant, as well as retail wine and beer, and a full liquor license/bar. Additionally, 100% of our Profits are Donated to Charity, a Cause near and dear to our Owner, in honor, memory and legacy of his beautiful and amazing wife who passed too soon from our lives. Overview We are seeking a skilled and detail-oriented Animal Butcher to join our team. You will handle the receiving, fabricating, and butchering of our weekly grass fed, antibiotic free cow, and pig, and arranging them in our meat cases. The ideal candidate possesses masterful knife skills, deep knowledge of animal anatomy, and a commitment to maintaining rigorous health and sanitation standards
Skills Meat Fabrication :
Break down primal and sub-primal cuts of beef, pork, lamb, and poultry into steaks, chops, roasts, and specific kitchen portions.
Yield Optimization :
Maximize the utilization of all meat segments to minimize food waste and control restaurant food costs.
Charcuterie & Processing :
Grind meats for custom blends, stuff sausages, and manage house curing or smoking programs per our restaurant menu items
Inventory & Storage :
Receive, inspect, and rotate stock using First In, First Out (FIFO) methods in walk-in coolers and freezers.

$15.00 - $22.00 per hour
