Since 1886, The Driskill has embodied timeless elegance and the spirit of Texas hospitality. Within the hotel, The Driskill Bar & Grill is reopening as a modern interpretation of the classic American steakhouse — where warm Texas spirit meets sophisticated design, impeccable service, and a menu crafted for both everyday dining and meaningful celebrations. As part of this reopening, we are seeking a skilled and detail-oriented Butcher to play a foundational role in our kitchen. This position is essential to delivering the quality, consistency, and craftsmanship expected of a premier steakhouse. The Role The Butcher will be responsible for fabricating, portioning, and maintaining the highest standards of quality and precision across all meat and seafood programs. This individual will work closely with the Executive Chef and culinary leadership to ensure excellence from product sourcing through final plate execution. Responsibilities Fabricate primal and subprimal cuts of beef to exacting steakhouse standards Portion steaks and proteins with precision, consistency, and minimal waste Maintain proper storage, labeling, and rotation of all products Oversee dry-aging program (if applicable), including monitoring and maintenance Ensure strict adherence to food safety and sanitation standards Collaborate with chefs on specialty cuts, features, and menu development Assist with inventory management and ordering as needed Maintain clean, organized, and efficient prep and storage areas Qualifications Minimum 2 years of professional butchery experience, preferably in a high-volume or fine-dining environment Strong knowledge of beef grading, aging processes, and protein handling Experience with whole animal or primal breakdown preferred High attention to detail and commitment to quality Ability to work early mornings, weekends, and holidays as needed Team-oriented mindset with strong communication skills
