Job Description

Sous Chef wanted From May/June until September 20th. Start date negotiable. Please note this role is based in McCarthy and we provide collection transportation from Anchorage, Glennallen and Chitina ahead of your start date. We will also return you at the end of your contract. An opportunity has arisen to make your mark in McCarthy at a wilderness vacation resort based in Wrangell St Elias National Park. There you will join an award winning dining establishment as part of an elite team leading the way in New Alaskan cuisine. As the Sous Chef at McCarthy's major employer, you will have the privilege and great responsibility of leading a team to successfully feeding resort guests, local residents and the abundance of travellers to the area; from breakfast service, all day casual dining, afternoon tea and fine dining dinners.
Your duties and responsibilities include:
Managing a team to deliver reliable, efficient and delicious food across three different eateries. Ownership of the daily breakfast for our high paying guests and the weekly luxury brunch event for resident and non resident diners. Baking and pastry; bread selections, high end afternoon tea, hearty and traditional baked desserts for our cafe and the all-day-dining saloon, and elevated desserts for our fine dining restaurant. Supporting the Head Chef in menu creation, sourcing ingredients, engaging with suppliers, and providing significant operational support for the fine dining restaurant using a range of technical skills, cooking from absolute scratch and prepping. Ensuring excellent attention to detail and discipline with all creative elements and output; even if you are not operationally producing the dishes. Keeping excellent standards for yourself and the team Liaising with other departments where relevant for guest satisfaction and a seamless experience Managing a budget (p&l), actively contributing to cost control Upholding the discipline of your team; ensuring respect, punctuality and attention to detail at all times. You will be fully supported by senior management in this regard. Education and experience. You must be technically trained, ideally in the French technique at culinary school. You must have worked in a fine dining restaurant, higher end steak house and/ or have working experience in a kitchen serving Continental European cuisine, Modern British fine dining or American fine dining. Skills and experience as a pastry chef, dessert chef and baker Highly skilled and comfortable in butchery and fish mongering, preparing stocks, sauces and paté Proficient in protein, steaks and seafood sauteeing and roasting. Worked as a Sous Chef or Chef de Partie (or equivalent), having managed or mentored a team of (excluding you) two people at minimum. Demonstrable experience in creation of dishes, understanding of flavour combinations and vision. Ideally having worked BoH at a hotel, cruise line, country club or resort.
HOUSING AND FOOD IS FREE
Housing is shared rooms. (Some tents available for single option Housing). Internet (wifi) available. Free wifi is always available. Local hi-speed wifi for $40 month is available. Verizon is the only cell company that works in Wrangell St-Elias National Park. Download WhatsApp for Voip use. All housing options include showers, laundry and kitchen use as well as free food provided for you to cook and clean up after yourself. All housing includes meal program of stocked kitchens for most items needed for meals. Staff cook and clean up after themselves in shared employee kitchens. Items provided include all basics as well as most produce and proteins. A complete list of Pantry, refrigerated and frozen items provided for staff is available to applicants. Most staff supplement their kitchen with some out of pocket expenses including eating at restaurants in the area, having Amazon products shipped in, purchases in town and at grocery stores in McCarthy, Valdez or Glennallen. Expect the majority of what you need on site and at no cost, but also expect your dietary substitutes to be your responsibility. Dietary issues and preferences such as Celiac, Vegans and vegetarians have an especially difficult time in remote locations due to logistics of special item needs. One final note of advice regarding far away places to work: In any remote location (such as wilderness Alaska or an island in the ocean) you will be on an adventure•and your control over your food will be your biggest struggle. The reality is, what's easy to get in the real world, like any specific item you crave, may be missing from your remote Alaska summer diet. We have decades of experience feeding crews in remote Alaska, your happiness matters to us•if your happy, our guests will be happy.
