  • Immediate Opening We need an Executive Pastry Chef who has already run a pastry kitchen.
This is a working seat. You will be on the mixer and the bench, and you will run a crew on that bench. You'll run House foundations: sponge, buttercream, ganache, fillings, soaks Viennoiserie / breakfast dough — mix, makeup, freeze, bake-off Pastry case and wholesale pastry tickets Daily production list, mixer schedule, oven schedule, walk-in pars Training so more than one person can mix a batch and finish a ticket Food cost, ordering, labeling, dating, Maricopa health standards Cake décor is its own department and has managment who works with you in your team. You own pastry production What you've already done: Held Executive Pastry Chef, Head Pastry, or pastry sous in charge of a department Run production volume (large mixer, sheet pans, hotel pans, wholesale or high-volume case) Written or locked recipes and handed them off to a crew Built a board: who mixes, who makes up, who bakes, who packs

$55,000.00 - $65,000.00 per year
