Job Description

Pono Pacific Kitchen is seeking a professional Sous Chef to join our back-of-house leadership team. Working alongside our Executive Chef, you will play a key role in managing daily kitchen operations, mentoring line staff, and maintaining the high culinary standards of our scratch-made menu in a high-volume, fast-paced environment. Sunday Guaranteed Days Off:
We are closed every Monday and Tuesday.
Holidays Off:
Closed on Easter, Fourth of July, Thanksgiving, Christmas Eve, and Christmas Day.
What You Will Do Kitchen Leadership:
Lead, train, and support the line cook team, fostering a collaborative, organized, and efficient kitchen culture that handles high-volume rushes with ease.
Service Standards:
Work the line and manage the pass during busy dinner services to ensure plating consistency, proper temperature, and rapid ticket times without sacrificing quality.
Operations & Inventory:
Assist the Executive Chef with daily prep schedules, ordering, portion control, and inventory management.
Quality Control:
Maintain high standards for ingredient freshness, food prep safety, and kitchen sanitation.
Events:
Assist in planning and executing private catering events and special menus.
What We Are Looking For Experience:
3+ years of professional cooking experience, with at least 1 year in a leadership role (Sous Chef, Kitchen Supervisor, or Lead Line Cook) in an upscale, high-volume, or fine-dining kitchen. Proven ability to deliver high-quality food quickly under pressure is a must.
Leadership Style:
A calm, collaborative communicator who leads by example rather than volume, keeping the team focused and fast during peak hours.
Technical Skills:
Strong culinary fundamentals, efficient knife work, excellent multi-tasking abilities, and solid knowledge of kitchen safety protocols (ServSafe certification preferred).
Reliability:
