This is a hands-on role for someone who takes real pride in the craft — clean knife work, precise cuts, beautiful plates, and consistency every single service. You'll own the prep line from open to service: breaking down whole fish, portioning, building your mise en place, and setting the standard for everything that leaves the pass. What You'll Do Handle all kitchen preparation required for service, start to finish Break down, debone, portion, and prep whole fish to service standard Prepare nigiri, sashimi, maki, hand rolls (temaki), and specialty rolls to spec Cook and plate hot items including tempura and udon Cook, season, and hold sushi rice to consistent quality throughout service Manage mise en place, par levels, and prep lists so the line never runs short Maintain strict standards for fish handling, temperature control, rotation, and freshness Keep your station and all equipment spotless and compliant with health code Receive and inspect deliveries; flag any product that doesn't meet standard Minimize waste through smart portioning and full utilization of product Support menu development and seasonal specials Work cleanly and efficiently alongside the rest of the kitchen team during peak service
What We're Looking For Required:
Minimum 3 years of professional sushi chef experience Demonstrated skill in the culinary art of sushi — knife work, cuts, and presentation Proven ability to debone, break down, and prep whole fish for service Working knowledge of nigiri, sashimi, maki, temaki, tempura, and udon Strong understanding of raw fish handling, food safety, and sanitation Ability to work a full 40-hour week including evenings, weekends, and holidays Ability to stand for extended shifts and lift up to 50 lbs Food Handler Card (or ability to obtain one within 30 days of hire, per LA County requirement) Authorized to work in the United States Nice to have: Training in a traditional Japanese kitchen or under an itamae Experience with omakase or chef's-counter service Familiarity with sourcing and quality grading of fish Conversational Japanese Experience training or mentoring junior kitchen staff What We Offer $30.00 per hour — competitive, consistent pay Guaranteed 40 hours per week — full-time, stable schedule Real growth : a clear path toward Lead Sushi Chef for the right person Ongoing training : hands-on development in new techniques, menu creation, and seasonal specials A kitchen where craftsmanship is genuinely valued, not rushed Great Manhattan Beach location, close to the water How to Apply Apply directly through Indeed with your resume.
