Full-time Job Summary:
Lecavalier Cellars is seeking a Tasting Room Chef to join our tasting room culinary team at our Newcastle Tasting Room. Reporting to the Executive Chef, the Tasting Room Chef oversees all back of house operations, ensuring food quality, safety compliance, inventory control, and staff performances. Key duties include staff training, managing costs, creating schedules, and maintaining equipment This position requires strong leadership, organization, and culinary skills to drive profitability and guest satisfaction.
Tasting Room Operating Days:
Wednesday
  • Sunday Duties:
  • Ability to set daily prep lists
  • Ability to use a variety of different knives
  • Can use measuring tools for accurate preparation
  • Can operate kitchen cooking equipment
  • Can operate commercial food slicer
  • Can read and make recipes
  • Understand proper FIFO principles of food storage
  • CAYGO (Clean as you go) throughout the shift
  • Rotate product to minimize waste
  • Daily ordering of food
  • Establish par levels
  • Ensure safety and sanitation standards are being met
  • Supervise staff on a daily basis
  • Report any performance issues to the Executive Chef
  • Ensure staff are in proper uniform and follow proper hygiene procedures
  • Help with production during operational hours
  • Follow opening/closing checklist provided by Executive Chef
  • Knowledgeable of food menu and daily specials
  • Maintain established food and labor goals
  • Follow all recipes
  • Train staff on par levels, prep sheets, and build cards
  • Perform other duties as requested by management About you:
  • High school diploma or equivalent
  • 2 years experience in a kitchen environment
  • Passionate about food
  • Clean, professional appearance
  • Ability to work weekends, holidays and other shifts as requested by management
  • Must be able to lift 50 lbs. (case of wine)
  • Basic computer skills
  • Ability to stand for extended periods of time
  • Must be 21 or older
  • Ability to help support other Lecavalier locations as needed by management
  • Ability to travel to offsite meetings and support business delivery
  • California Food Handler certification required
  • Have reliable transportation to work How to
