ANNOUNCEMENT OF POSITION VACANCY SUMMARY
Under general supervision of the Executive Chef, the Sous Chef is responsible for providing supportive leadership to kitchen staff throughout food service. Their duties include assisting the Executive Chef in monitoring kitchen activities, expediting orders to ensure quality taste or presentation and taking on additional responsibilities in the Executive Chef's absence to ensure that kitchen staff has proper direction. Will be required to work evenings and weekends. SOME OF THE THINGS THAT YOU WILL GET TO DO
(this is only a small sampling of work variety): Prepare meals and food to meet the specifications of guests in a timely manner Oversee production and assist with food preparation. Be proficient in every station, expediate dining service volume; ensure that each dish that leaves the kitchen is checked for quality, presentation and correct temperature. Properly measuring kitchen ingredients and food portions Ensure kitchen staff adhere to set standards, procedures, department rules and sanitation requirements Properly utilizes kitchen equipment for assigned location including, manual and mechanical equipment such as knives, food processers, grills, ovens, steamers and warmers in food preparation Managing the kitchen inventory and ensuring supplies are stored and served fresh and of high quality Ensure proper HACCP food safety for all received, stored, cooked, cooled, cold and hot holding, served, transported, ready to eat, leftover and discarded foods. Maintain the workstation and kitchen equipment clean, organized and sanitized Take charge of kitchen opening, closing and other side duties as directed by the Executive Chef Collaborate with the Executive Chef in menu writing and recipes Assist with inventory and supply tracking for food and equipment Maintains positive behaviors and actions and provides the highest quality of service to customers at all times. Reports all accidents and injuries in a timely manner. Responsible for submitting a variety of reports in an accurate, timely manner. Ensures continued adherence to all Foundation standards and procedures. Performs other duties as assigned. SUPERVISION
: Responsible for the selection, training, supervision, and evaluation of staff necessary to carry out effective operations of area assigned; directly supervises culinary and student staff; monitors the activities of contracted staff providing services. MINIMUM QUALIFICATIONS
Must possess a degree equivalent to graduation from a two-year college or recognized vocational certificate in culinary arts or management and a minimum of one year of food production management; or a minimum of three years' experience in the Sous Chef position. Demonstrated institutional, hotel, or restaurant culinary skills to include large quantity production. College or university dining service experience is preferred Experience with a computerized menu management system, and knowledge of office and industry software applications is necessary. Strong leadership, oral and written communication skills are required Servsafe Manager's Certification or equivalent Ability to develop, interpret and apply policies and procedures to variety of situations. Ability to be resourceful and to take initiative. Ability to work cooperatively in a multi-ethnic environment. Flexibility and open to new ideas and adaptable to changing technology.
