Duties Prepare and assemble a variety of sushi, sashimi, and other Japanese dishes with meticulous attention to detail and presentation. Maintain high standards of food safety, hygiene, and proper handling of ingredients throughout all stages of food preparation. Plan menus that incorporate fresh ingredients, seasonal flavors, and innovative techniques to keep offerings exciting and appealing. Ensure all food preparation aligns with established recipes, portion sizes, and quality standards. Collaborate with kitchen staff to coordinate meal service efficiently during busy hours while maintaining a lively team environment. Manage ingredient inventory, monitor freshness, and communicate supply needs to ensure continuous availability of quality products. Uphold cleanliness and organization in the sushi station, adhering to health regulations at all times. Qualifications Proven experience as a Sushi Chef or in a similar culinary role within a restaurant or fine dining setting. Strong knife skills with the ability to prepare fish, vegetables, and other ingredients precisely and efficiently. Demonstrated knowledge of food safety practices and proper handling techniques specific to raw seafood. Experience with menu planning, food preparation, cooking techniques, and food industry standards. Background in dietary department or dietary aide experience is a plus for understanding special dietary needs. Excellent food service skills with the ability to work quickly under pressure while maintaining attention to detail.
