JOB DUTIES
Establish and maintain an F&B Manual that reflects service standards, food quality production, portion control, and cost control, while conforming to State Health Department Codes. Plan meals and prepare menus, considering the activity in the F&B department. Establish written standardized food recipes and beverages to ensure consistent quality and portion control. Supervise kitchen operations by positioning in front of cooking ranges to check portion sizes, preparation methods, cooking, and garnishing; provide instruction and guidance as necessary to ensure food is prepared as ordered. Assume complete control of the kitchen. Maintain cleanliness and organization in all kitchen areas as outlined in the F&B Manual. Complete opening and closing checklists as specified in the F&B Manual. Receive and check food and supplies into the kitchen and storerooms; inspect condition, verify accuracy against invoices and orders, and ensure freshness. Store new and reused products at proper temperatures and with proper wrappings. Manage and monitor daily activity and financial requirements, including ordering products, monitoring stock levels, and completing monthly inventory as per the F&B Manual. Continue professional relationships with vendors. Assist in the preparation and adherence of the F&B Operational Budget. Operate within the guidelines, policies, standards, and constraints established by the golf club. Conduct daily walkthroughs to ensure the facility is safe, presentable, and that courtesy and efficiency are being exercised throughout (per the F&B Manual). Prepare and submit weekly employee schedules and bi-weekly payroll summaries to the supervisor. Adjust schedules as needed to ensure efficient use of employees. Attend and participate in weekly department head meetings and other periodic employee meetings.
MINIMUM REQUIREMENTS
At least 2 years of experience in the job offered or as or as a Food and Beverage Director. Must have a professional certification such as Canadas Interprovincial Red Seal Chef or American Culinary Federation (ACF) Certified Executive Chef, or equivalent.
