We are building a disciplined, ambitious kitchen and looking for a Senior Line Cook ready to grow into a Sous Chef role. This is not a standard line cook job. This is for someone who wants responsibility, speed, and a clear path to leadership. What You'll Do Execute service across live fire (robata/espetada), hot tapas, and crudo stations Maintain high-level consistency, organization, and cleanliness under pressure Work directly with the Chef on prep systems, service flow, and menu execution Help lead the line during service and set the standard for junior cooks What We're Looking For 2-4 years experience in a fast-paced, quality-driven kitchen Strong fundamentals: knife skills, organization, timing Experience with wood fire, grill, or high-heat cooking is a big plus Able to handle pressure without losing focus or standards Ambitious mindset — you want to become a Sous Chef, not stay comfortable What You Get Clear path to Sous Chef based on performance (not time) Direct mentorship and exposure to a serious kitchen system Competitive pay based on experience Opportunity to be part of building something from the ground up Important If you are looking for an easy line cook job, this is not it.
