Job Description
Job Summary We are seeking a passionate and experienced Sushi Chef to join our team. In this role, you will prepare authentic sushi dishes with precision, creativity, and consistency. You will be responsible for all fish‑prep tasks—including filleting, trimming, portioning, and marinating—as well as preparing vegetables, sauces, and other ingredients required for rolling sushi. Your strong knife skills, food handling knowledge, and ability to work efficiently in a fast‑paced environment will help ensure every dish meets our high standards of quality and presentation. This position also involves maintaining a clean, safe workspace and supporting junior team members when needed. Responsibilities Prepare sushi, sashimi, specialty rolls, and other Japanese dishes with accuracy and attention to detail Perform all fish preparation, including filleting, cutting, portioning, and proper storage to maintain freshness Prep vegetables, sauces, garnishes, and other ingredients needed for rolling sushi Demonstrate expert knife skills for slicing fish and produce safely and efficiently Maintain inventory of seafood, rice, nori, and other essential ingredients while minimizing waste Follow strict food safety and sanitation protocols to uphold health standards Work closely with kitchen staff to coordinate food preparation during busy service hours Train and guide junior team members on sushi techniques and safe food‑handling practices Assist in developing new menu items that highlight creativity and innovation Keep workstation clean, organized, and compliant with health regulations Experience Requirements Minimum 3+ years of professional sushi‑making experience in a restaurant or hospitality environment Strong knowledge of sushi preparation, fish handling, knife techniques, and food presentation Hands‑on experience preparing fish and ingredients specifically for rolling sushi Prior leadership or mentoring experience in a kitchen setting is preferred Familiarity with food safety standards, sanitation procedures, and inventory management Ability to work effectively with diverse team members in a fast‑paced environment Culinary arts or hospitality training is a plus Proven ability to maintain high‑quality standards during peak service hours
