We're looking for a Head Sushi Chef who can lead from the front, maintain consistency at scale, and build a strong, disciplined team. This is not a "figurehead" role — you will be on the line, setting the standard daily. ## Key Responsibilities
  • Lead and manage sushi line operations during fast-paced service
  • Maintain strict consistency in sushi preparation, presentation, and portioning
  • Break down whole salmon and fabricate tuna loins efficiently
  • Train, develop, and hold sushi staff accountable to standards
  • Ensure food safety, cleanliness, and organization at all times
  • Manage prep flow, ticket times, and station execution under pressure
  • Collaborate with ownership and management on operations and improvements ## Requirements
  • Proven experience as a Sushi Chef in a fast-paced environment
  • Ability to break down whole fish (salmon required, tuna strongly preferred)
  • Strong knife skills and clean, efficient technique
  • Leadership experience — ability to run a team, not just work a station
  • Deep understanding of sushi rice, fish handling, and quality control
  • Reliable, consistent, and professional under pressure
  • Food Safety Certification (or ability to obtain quickly) ## Schedule
  • 5 days per week
  • Nights and weekends required
  • ~55-60 hours per week ## Compensation
