This role is ideal for a culinary professional with foundational sushi experience who is eager to refine their craft, learn advanced techniques, and exceed guest expectations in a high-energy, modern Japanese restaurant. You will work closely with our lead kitchen team to execute precise fish cutting, build top-quality rolls and nigiri, and deliver an outstanding dining experience during fast-paced dinner services. Additional details will be provided during the interview and stage. Please reply with your available dates and times based on our hours of operation. Once confirmed, please arrive in all-black attire, a hat, non-slip kitchen shoes, your sushi knife, and an updated resume. Pay is DOE (Depending on Experience).
What You'll Do Sushi Execution:
Prepare nigiri, cut rolls, sashimi, and maki with precision, clean presentation, and consistency.
Fish Prep & Butchery:
Utilize proper fish-cutting techniques and maintain strict quality control and station hygiene.
Service Efficiency:
Work efficiently under pressure during peak dining hours while keeping a clean, organized workspace.
Growth & Learning:
Show strong initiative, embrace feedback, and actively seek opportunities to elevate menu execution and station management.
Assisting duties:
Picking up side tasks with details cutting, and prep.
What We're Looking For Experience:
1-2 years of professional experience cutting fish, prepping sushi ingredients, and rolling cut rolls.
Technical Skills:
Solid knife skills and basic knowledge of Japanese raw fish handling and roll assembly.
Mindset:
Willing, eager to learn, detail-oriented, and driven to exceed quality and service expectations every shift.
Availability:
Flexible schedule, including weekends and high-volume evening shifts.
