Job Summary Key Responsibilities:
Assist the Executive Chef in overseeing the daily kitchen operations, including food preparation, cooking, and presentation. Supervise and lead kitchen staff (line cooks, prep cooks, dishwashers), ensuring they follow all kitchen procedures, health & safety standards, and quality controls. Prepare and cook house-made pasta , including hand-rolled, stuffed, and extruded varieties, ensuring consistency and quality with every dish. Collaborate with the culinary team to develop and refine seasonal menus, specials, and new pasta dishes while maintaining the restaurant's Italian roots. Maintain cleanliness and organization in the kitchen, ensuring all kitchen areas are compliant with food safety and sanitation regulations. Ensure inventory management , including ordering and managing ingredients for pasta dough, sauces, garnishes, and other menu items. Train and mentor kitchen staff , improving skills, and maintaining a high level of productivity and culinary knowledge. Assist in cost control , including portioning, waste management, and minimizing food costs while maintaining quality standards. Ensure all dishes are plated beautifully and served to customers in a timely manner, adhering to portion sizes and presentation guidelines. Communicate effectively with front-of-house staff to ensure smooth service during busy hours and maintain customer satisfaction. Monitor kitchen operations to ensure compliance with all health and safety standards and company policies.
