Job Overview:
We are looking for a passionate and skilled Fresh Bread & Pasta Captain to oversee all operations related to our freshly made breads and pasta. This role combines artisanal baking and pasta-making expertise with quality. You will work closely with the Executive Chef to ensure that all products reflect the quality and authenticity of Italian culinary traditions, while also bringing creativity and precision to the role. Key Responsibilities Oversee the production of fresh breads and fresh pasta, ensuring high quality, consistency, and adherence to recipes. Develop, test, and refine artisanal recipes for breads and pasta, introducing seasonal or signature products. Manage daily operations of the bakery/pasta prep area, including ingredient preparation, baking/pasta-making schedules, and plating or packaging. Ensure food safety, sanitation, and hygiene standards are met in all preparation areas. Handle customer inquiries or feedback regarding artisanal bread or pasta products. Qualifications & Skills Proven experience in bread baking and/or pasta-making, preferably in an Italian restaurant Deep knowledge of baking and pasta-making techniques, ingredients, and equipment. Excellent organizational and multitasking abilities, with attention to detail. Familiarity with food safety regulations and best practices in sanitation. Flexibility to work early mornings, weekends, and holidays as needed. Culinary arts, baking/pastry, or hospitality degree. Full-time position, based on the production schedule of fresh bread and pasta. Fast-paced bakery and kitchen environment; may involve early shifts and physical tasks. Close collaboration with kitchen leadership and front-of-house teams.
