Job Description

at Blufish Sushi Schaumburg in Schaumburg, Illinois, United States Job Description Responsible for managing all kitchen operations at a fine-dining, full-service Japanese restaurant, ensuring high standards of food quality, consistency, cost control, and compliance with health and safety regulations.
Specific duties include:
plan, develop, and oversee preparation of menus, including seasonal and specialty items, balancing creativity with cost efficiency; direct daily kitchen operations, including food preparation, cooking, plating, and service timelines, ensuring quality and consistency; supervise, schedule, and train culinary staff, including sous chefs, line cooks, and prep staff; monitor performance and ensure adherence to culinary and sanitation standards; enforce portioning, presentation, and quality standards; conduct regular inspections to ensure compliance with local health regulations and food safety practices; source and procure ingredients from approved vendors; manage inventory, minimize waste, and maintain food and labor costs within budget; implement kitchen procedures and workflows to improve operational efficiency and consistency across shifts; oversee onboarding and training of new staff to establish and maintain culinary standards; and manage direct reports including Sous Chef, Line Cooks, Prep Cooks, and Utility/Dishwashing staff.
MINIMUM REQUIREMENTS
: High School/GED or foreign equivalent and two (2) years of experience in the job offered or as a Chef, Sous Chef, or Head Chef in a full-service restaurant environment.
REQUIRED SKILLS
Must have skills/expertise with the following: Menu planning and development, balancing creativity and cost control; Directing kitchen workflows and supervising staff in a high-volume, full-service environment; Knowledge of food safety, sanitation, and compliance with local health regulations; Training and supervising culinary staff to ensure consistent menu execution; Managing inventory, controlling food and labor costs, and applying waste-reduction practices; Sourcing quality ingredients and maintaining vendor relationships; and Enforcing portioning, plating, and presentation standards.
