Lodge Manager Position Overview Honey Brake Lodge, one of the nation's premier year-round outdoor recreation lodges, is seeking a dedicated Chef to lead its culinary operations. This role is responsible for overseeing the daily preparation of food, ensuring exceptional meal quality, guest satisfaction, and efficient kitchen management. The Chef will execute menus, train staff, and uphold the highest standards of food quality and sanitation. As the driving force behind the lodge's dining experience, this individual will ensure that every visitor—from hunters and anglers to corporate and family retreat guests—receives five-star service and unforgettable Southern hospitality. Key Responsibilities Culinary & Catering Lead the kitchen team in food preparation, ensuring consistency in quality, taste, and presentation. Maintain food quality throughout the process using HACCP practices. Train kitchen and restaurant staff on proper food preparation, handling, and storage methods. Manage day-to-day kitchen operations efficiently. Establish kitchen goals, anticipate trends, and implement profit-oriented and cost-saving strategies. Ensure strict adherence to health department regulations and food handling guidelines. Develop special menus, create recipes, and train staff on new menu items. Maintain effective communication within the kitchen, addressing staff concerns and resolving issues promptly. Complete daily food orders based on events and projected business levels. Conduct regular kitchen inspections and take corrective actions as needed. Operate within assigned budgets, control operating expenses, and manage labor costs. Foster a positive team environment, promoting collaboration and efficiency. Stay updated on current culinary trends and introduce new products. Assist with customer relations and problem-solving, ensuring guest satisfaction. Utilize time and resources effectively, including human, financial, and equipment assets. Qualifications Proficient in professional cooking techniques and knife-handling skills. Ability to read, speak, and understand intermediate-level cooking directions. Commitment to quality service and strong food and beverage knowledge. Understanding of safety, sanitation, and food handling procedures. Ability to work in a team environment and remain calm under pressure. Availability to work nights, weekends, and some holidays. Strong problem-solving skills, self-motivation, and organizational abilities. Maintains a neat and efficient workspace. Encourages and promotes positive behaviors among coworkers. Takes ownership of responsibilities, ensuring efficiency and accountability. Physical Demands Ability to stand for extended periods. Capability to move and transport food carts, equipment, and supplies. Ability to reach, bend, stoop, and lift up to 50 pounds frequently. Comfortable working in extremely hot or cold environments. Work Conditions Fast-paced kitchen environment with high-volume food preparation. Exposure to hot stoves, ovens, grills, and cold storage areas. Extended periods of standing, bending, and lifting heavy items. Requires flexibility in scheduling, including nights, weekends, and holidays. Interaction with guests, staff, and management in a dynamic hospitality setting. Adherence to strict food safety and sanitation regulations. Occasional outdoor cooking or catering events. Education & Experience Requirements Degree in Culinary Arts or Food Service from an accredited institution (preferred). ServSafe Manager certification.
