Job Description

Genki Wagyu Shabu House is an upscale Japanese restaurant in Rockville, MD, delivering an authentic and refined dining experience centered on premium wagyu and shabu shabu. We are seeking experienced and passionate Sushi Chef to bring exceptional Japanese craftsmanship to our kitchen and elevate our menu offerings. About the Role As a Sushi Chef at Genki Wagyu Shabu House, you will be responsible for executing high-quality sushi and Japanese small plates that complement our wagyu and shabu shabu menu. This is an opportunity to join a team that takes deep pride in authentic Japanese cuisine, premium ingredients, and warm, elevated hospitality. Key Responsibilities Prepare and present a full range of sushi, sashimi, nigiri, and maki rolls to the highest standard of quality and authenticity Source, inspect, and butcher fresh seafood; ensure all ingredients meet premium quality standards Develop and execute seasonal sushi specials in collaboration with the head chef Maintain a clean, organized, and fully sanitized sushi station in compliance with all Maryland health department regulations Monitor ingredient inventory, communicate supply needs, and assist with ordering and restocking Coordinate with front-of-house staff to ensure smooth ticket flow and precise plate presentation Uphold all food safety, hygiene, and allergen protocols at all times Qualifications Minimum 1 year of experience as a sushi chef or Japanese kitchen cook in a restaurant setting Proficiency in traditional Japanese knife skills and sushi rice preparation Knowledge of seafood handling, portioning, and freshness standards Ability to work efficiently in a fast-paced, high-volume environment Passion for Japanese cuisine and commitment to authentic culinary technique Japanese language skills a plus, but not required Compensation & Benefits Flexible Schedule.
