As the Full-Service Restaurant Sous Chef, you'll lead from the line, own execution standards, and develop a high-performance kitchen culture where precision and pride drive every dish. What You'll Do Drive Culinary Excellence Lead kitchen operations in a full-service restaurant, ensuring quality, consistency, and creativity on every plate. Collaborate with the Executive Chef on menu vision, food presentation, and seasonal innovation. Monitor food quality and production standards to exceed Guest expectations, every time. Build + Elevate the Team Train and mentor Line Cooks, Prep Cooks, and other culinary team members to uphold best-in-class culinary standards. Conduct pre-shift meetings, manage daily prep lists, and oversee station readiness with discipline and efficiency. Create a values-aligned culture grounded in accountability, respect, and passion for the craft. Lead with Strategy + Precision Manage food and labor costs with sharp decision-making and a focus on operational excellence. Monitor inventory levels, ordering accuracy, and vendor quality to support seamless production. Ensure full compliance with health, safety, and gaming regulations—including food handling, sanitation, and venue policies. Influence + Impact Represent the kitchen in leadership discussions, cross-departmental collaborations, and strategy sessions. Drive visibility for the culinary team and foster a reputation for excellence that elevates the entire Guest experience. Will involve standing/walking for extended periods and light lifting during events. #FB2
