Job Description
The Heirloom Room is Rocky Waters Motor Inn's signature fine dining experience, rooted in the rich culinary traditions of Appalachia. As Sous Chef, you are the Executive Chef's right hand — a skilled culinary leader who drives daily kitchen operations, maintains uncompromising food quality standards, and develops a high-performing heart of house team. This is a role for an ambitious, hands-on culinarian who leads with pride, thrives under pressure, and is committed to both culinary excellence and team growth. What You'll Do Culinary Excellence & Standards Take full ownership of food quality, appearance, and consistency on every shift Ensure all food preparation, handling, storage, and sanitation practices meet AATMOS and ServSafe standards Develop and execute unique, flavorful, and executable recipes in collaboration with the Executive Chef Maintain full knowledge of all menu items, recipes, methods of production, and presentation standards Kitchen Operations Assist the Executive Chef with daily, weekly, and monthly inventory and ordering protocols Assume full responsibility for overall heart of house operations in the absence of the Executive Chef Ensure highest levels of guest satisfaction while actively managing food and operating costs Adhere to all AATMOS standard operating procedures pertaining to food preparation, receiving, storage, and sanitation Team Leadership & Development Lead, manage, and motivate the heart of house team with a positive, professional, and supportive approach Train and oversee team members on cleanliness, sanitation, and quality standards Assist the Executive Chef in developing and implementing training protocols to drive consistent performance Maintain composure and objectivity under pressure, setting the standard for the team in high-volume service periods Foster a cohesive, accountable, and high-performing kitchen culture What We're Looking For Experience & Education Minimum 2 years of restaurant culinary leadership experience required Culinary degree, hospitality management degree, or equivalent on-the-job experience as a Sous Chef Skills & Abilities Strong culinary technique with the ability to create and execute recipes at a fine dining level Excellent leadership, communication, and problem-solving skills with the ability to develop and motivate a team Physical & Schedule Requirements Flexible availability including evenings, weekends, and holidays Ability to stand for extended periods and lift up to 50 lbs throughout each shift ServSafe Manager Certification required within 90 days of hire and must be maintained throughout employment Benefits & Perks Medical insurance Discounted vision and dental insurance Employee hotel travel program with discounted rooms across the AATMOS portfolio Paid time off, vacation pay, and sick pay ZayZoon daily pay — access your earned wages when you need them Opportunities for career growth within a growing hospitality group At AATMOS, we're committed to a positive, inclusive workplace where passionate hospitality professionals can thrive and grow.
