Job Description
Gourmet & Company is a locally owned, from-scratch American restaurant serving casual lunch and upscale dinner. We work closely with local farmers, artisans, and purveyors and are committed to quality ingredients, consistency, and professionalism. We are looking for an experienced, dependable PM Sous Chef to lead evening line execution and closing. This is a hands-on position for someone who can run a smooth service, work alongside the team, maintain high standards, and ensure the kitchen is properly closed and prepared for the next day. The PM Sous Chef will work directly under the Executive Chef and Sous Chef, carrying out their standards and priorities while providing day-to-day leadership to the evening kitchen team. The ideal candidate is organized, calm under pressure, comfortable directing others, and able to maintain consistency during busy dinner service. Responsibilities Lead and coordinate the kitchen team during evening service Carry out the direction, standards, and priorities established by the Executive Chef and Sous Chef Ensure stations are properly stocked, organized, and ready before service Work actively on the line and assist wherever needed Maintain standards for food quality, presentation, portioning, and ticket times Communicate effectively with cooks, service staff, and management Train, coach, and provide direction to line cooks and support staff Enforce recipes, preparation standards, sanitation procedures, and kitchen policies Monitor product levels and communicate prep and ordering needs Minimize waste and ensure proper labeling, storage, and product rotation Supervise nightly cleaning and closing procedures Ensure the kitchen is clean, secure, and ready for the following shift Report equipment problems, staffing concerns, shortages, and service issues to management Qualifications Previous experience as a sous chef, kitchen supervisor, lead line cook, or similar kitchen leadership position Strong grill, sauté, pantry, prep, and station-management skills Ability to lead a kitchen team during high-volume service Ability to take direction and work collaboratively with the Executive Chef and Sous Chef Strong organizational, communication, and problem-solving skills Ability to work cleanly, efficiently, and consistently Dependability and professionalism Thorough understanding of food safety and sanitation Interest in seasonal ingredients and from-scratch cooking Availability to work evenings, Fridays, Saturdays, and other shifts as needed What we offer Normally closed Sundays and Mondays Closed most major holidays, with the exception of Valentine's Day and New Year's Eve Annual salary of $55,000 Opportunity to work with high-quality local and seasonal ingredients Professional kitchen with high standards Stable, locally owned restaurant environment Opportunity to take an important leadership role in the kitchen If you are interested in gardening, farming, or locally grown ingredients, we are developing a one-third-acre urban farm five minutes from the restaurant to complement our seasonal menu.
