AATMOS is hiring a Executive Chef Paloma Scratch Kitchen in Pigeon Forge, TN. This is a full-time position. Paloma Scratch Kitchen at The Wayback | Executive Chef Paloma Scratch Kitchen is the on-site culinary destination at The Wayback -- a fun, flavor-forward restaurant that brings the same vibrant, eclectic energy as the hotel itself. We are looking for an Executive Chef who brings exceptional technique, creative vision, and strong leadership to our kitchen, someone who takes full ownership of culinary operations, develops a high-performing team, and delivers a dining experience that reflects the playful, one-of-a-kind character of The Wayback. This is a role for an ambitious, organized culinary leader who thrives in a fast-paced environment and understands that great food and great culture go hand in hand. What You'll Do Culinary Excellence & Menu Development Lead all culinary operations across every meal service period, ensuring consistent quality, presentation, and guest satisfaction Drive ongoing menu and recipe development that reflects Paloma Scratch Kitchen's flavor-forward, scratch-made identity Maintain full ownership of food quality, appearance, and consistency on every shift Ensure all food preparation, handling, storage, and sanitation practices meet AATMOS Hospitality and ServSafe standards Financial & Operational Management Manage weekly and monthly P& L, ensuring food costs remain within acceptable margins Oversee kitchen labor budget, scheduling, and staffing levels to maintain operational efficiency Monitor and manage inventory, plate costing, and waste control in accordance with AATMOS Hospitality standard operating procedures Partner with the restaurant management team to align kitchen operations with broader restaurant goals Team Leadership & Development Provide structure, direction, and day-to-day leadership to the culinary team Develop, train, and mentor line-level culinary staff with a focus on technique, standards, and growth Foster a positive, professional, and accountable kitchen culture with high employee morale Maintain composure and objectivity under pressure, setting the tone for the team in high-volume service periods
