Job Description
We are seeking a skilled and passionate Lamination Pastry Chef to join our artisan bakery team. In this role, you will own the daily production of our high-quality laminated doughs, including croissants, danishes, kouign amann and seasonal viennoiserie. The ideal candidate possesses deep technical knowledge of temperature control, gluten development, and fat-to-dough ratios to deliver perfectly flaky, beautifully open-crumbed products every day.

ResponsibilitiesProduction:
Execute large-scale daily production of high-quality laminated doughs from scratch. On average we laminate 6 books a day.Lamination:
Manage the sheeting, folding, locking-in, and turning processes using mechanical sheeters and hand-rolling techniques.Shaping & Assembly:
Cut, shape, fill, and proof a variety of classic and modern viennoiserie items.Baking:
Monitor proofing environments and operate rotating ovens to ensure optimal rise, color, and texture.Quality Control:
Maintain strict temperature thresholds for dough, butter blocks, and production rooms.Inventory & Prep:
Manage inventory over the course of the week to ensure order fulfillmentSanitation:
Maintain a spotless workstation, adhering to all local food safety and health department regulations.Requirements & QualificationsExperience:
Minimum 2-3 years of professional experience specializing in viennoiserie or laminated doughs.Technical Skill:
Proficient in operating commercial dough sheeters, proofers, and ovens.Knowledge:
Deep understanding of baker's percentages, flour hydration, gluten structures, and fermentation.Stamina:
Ability to stand for long periods, work in cool environments, and lift up to 50 lbs regularly.Schedule:
