Rotating Sous Chef / Chef de Tournant Miramont Country Club — Bryan, TX 77802 | Full-time | On-site
ABOUT THE ROLE
Miramont Country Club is looking for a skilled and versatile kitchen leader to rotate through all culinary stations, drive food quality, and mentor the next generation of cooks. This is a high-impact role at a prestigious private club, where you'll collaborate with our Executive Chef team, curate member dining specials, and step into leadership whenever the Sous Chef is away. WHAT YOU'LL DO
Rotate through all savory line stations for both lunch and dinner service Monitor and maintain food quality and consistency across all stations Curate and execute Chef's specials for Wednesday and Friday member dining Collaborate with Sous Chefs on daily specials and kitchen strategy Oversee portioning of meat and fish with proper storage protocols Assume kitchen leadership in the absence of the Sous Chef Assist with banquet and special event preparation Maintain temperature logs, sanitation records, and cleanliness standards
LEADERSHIP & TEAM
Train and mentor junior kitchen staff on cooking techniques and portioning Conduct line cook and FOH briefings on Chef's specials Establish organized mise en place and guide kitchen efficiency Implement SOPs, best practices, and sanitation protocols Communicate daily with the Executive Chef on seafood inventory and ordering Promote a positive, professional kitchen culture
WHAT WE'RE LOOKING FOR
Required:
High school diploma or equivalent Experienced Line Cook or similar culinary role Strong knowledge of advanced cooking techniques and all savory stations Food safety certification Ability to work flexible hours including evenings, weekends, and holidays Excellent communication and team-oriented mindset
Preferred:
Degree or certification in Culinary Arts High-end restaurant, hotel, or private club experience
