All applicants must possess knowledge of restaurant kitchen procedures, basic knife skills and a solid understanding of food preparation and health code standards. The Sushi Chef prepares food that meets current federal, state, and local standards, guidelines, and regulations by following established policies and procedures and ensures that safe and high quality food service is provided at all times. He or she prepares all types of Japanese Cuisine and must have superior knife skills. Our Sushi Chefs fuse the beauty and simplicity of Japanese cooking with the flair and exuberance of Latin cuisine, resulting in amazing creations and exciting visual presentations. The ideal candidate for this position has a high school diploma or GED, at least one year of experience as a sushi chef, and knowledge of food safety and handling requirements. Formal culinary training is highly desired. Fluent Communication in Spanish & English, excellent time-management skills, and professional dress, speech, and behavior are required for this position.

RESPONSIBILITIES

Preps food for cooking, including washing and chopping vegetables, etc. Prepare ingredients for cooking, including portioning, chopping, and storing food. Pull food from freezer storage to thaw in the refrigerator. Weigh, measure, and mix ingredients according to recipes or personal judgment. Monitor food quality while preparing food. Test foods to determine if they have been cooked sufficiently, using methods such as tasting, smelling, or piercing them with utensils. Ensure proper portion, arrangement, and food garnish to be served. Wash and disinfect kitchen area, tables, tools, knives, and equipment. Check and ensure the correctness of the temperature of appliances and food. Performs shift opening and closing duties as assigned Notify manager if a product does not meet specifications. Communicate any assistance needed during busy periods. Follow all company and safety and security policies and procedures; report maintenance needs, accidents, injuries, and unsafe work conditions to manager; complete safety training and certifications. Ensure uniform and personal-appearance are clean and professional. Welcome and acknowledge all guests. Speak with others using clear and professional language.

QUALIFICATIONS

High school diploma or GED preferred 3-5+ year minimum experience as a Sushi Chef Formal culinary training a plus Extensive knowledge of proper knife cuts Excellent communication skills, verbal and written (Must speak Spanish & English) Knowledge of general sanitary and safety practices. Approved food management training as required by local laws Able to bend, kneel, squat, stand, and lift heavy objects as needed Able to work days, evenings, weekends, and holidays Exceptional personality and hospitality driven attitude.
