The Twisted Track kitchen operates an efficient kitchen with a mix of appetizers, sandwiches, salads, and pizzas. Our goal is to serve craft beer accompanied by delicious food as well as wine and cider. We are seeking an individual with culinary creativity and commercial kitchen management experience to operate the food portion of our business. The successful candidate will have a hands-on work ethic, energy, passion, creativity, chef skills and kitchen manager experience as a foundation to create delicious meals and experiences for our patrons. You will be responsible for planning our menu, ensuring that each dish is nutritious and cost effective, while supervising a team of kitchen staff delivering food that meets the highest quality standards. We also seek an individual that will be able to create interesting and complementary food/beer pairings. We envision our menu to feature common well-known pub fare-delivered with a twist in addition to rotating menu items that involve access to unique and/or seasonal ingredients. We want our kitchen leader to develop menu items that are unique Twisted Track exclusives to make the customer experience memorable. We also expect to have healthy and/or interesting options for customers with dietary restrictions. To ensure success in your role as Chef, you should be an excellent leader with great organizational skills and impeccable time management. Top candidates will also be creative individuals, capable of creating dishes that set us apart and keep people coming back for more.
Chef Responsibilities:
Create innovative, yet fitting and appropriate, menu for Twisted Track Brewpub. Work with and collaborate with TTB management for special dinners/menu items that pair with unique beers. Create cooking processes & procedures to ensure quality and repeatability with a changing cook staff. Oversee the food preparation and cooking process. Complete duties of a line cook when needed, and is capable of performing the duties of all kitchen positions. Adhere to and maintain health standards for food and workplace safety. Participates in the hiring process by conducting interviews and making staffing recommendations. Manage all aspects of kitchen staffing taking into account the variable level of demand. Lead, train and supervise the staff to reach team goals. Order and inventory all foods and ingredients. Network with food suppliers to take advantage of opportunity buys and unique in-season or special foods when they are available. Store all food products in compliance with health and safety regulations. Ensure the kitchen is clean and organized. Manage food and labor costs to deliver an agreed-upon margin. Interact with customers to make them feel important and get feedback on menu items and presentation. Maintain weekly and monthly cost reports.Requirements:
Bachelor's degree in Restaurant Management or certification from culinary school is desired (Preferred) A minimum of 3 years' experience in a similar role is a plus. In-depth knowledge of kitchen health and safety regulations, Food Safe certified. Ability to work well in a stressful and fast-paced environment. Excellent problem-solving and conflict management abilities. Outstanding communication and organizational skills. This is a salary position, based on experience, salary range is negotiable for the right person. PTO of 15 days per year is included Supplemental insurance is available at employee's expense. Health insurance is negotiable as well.Pay:
