What Success Looks Like:
Maintains responsibility for day-to-day operation of the kitchen and has complete responsibility for the kitchen in its entiretyDevelops and implements procedures to ensure that all work practices meet or exceed the established standardsCommunicates daily with General Manager for updates, changes and revisions to existing contractsMaintains standards for food quality, presentation, handling, sanitation, and safetyFollows all appropriate policies and proceduresEnsures timely and courteous follow-through on all client, guest, and team member requestsAssists in the selection, supervision, training, development, scheduling, evaluating, disciplining, and coaching of staffDemonstrates positive leadership characteristics that empower and inspire employees to meet and exceed standardsMonitors food and labor costsConducts daily walk-through of all walk-in refrigerators, dry storage areas and food lines to ensure rotation, usage, cleanliness and proper sanitationUtilizes specification sheets to prepare daily preparation requirements, maintains par levels of necessary itemsPrepares and manages creation of new menu itemsEnsures attractive, consistent presentations of food items, both buffet and plated Interacts/supervises line cooks to monitor quality, presentation and consistency of food items preparedHandles all needs and accommodates customer requests in a timely mannerSets up, re-stocks, maintains, and cleans food preparation areasEnsures presentation standards are met for all hot and cold itemsReads and interprets recipesConducts product inventories, ordering and receiving of productEnsures team maintenance of grooming standardsEnsures team adherence to standards for sanitation and safe food handlingResponsible for all opening and closing kitchen procedures Is crossed trained in the AM, PM, and Banquets programs to assist as needed What You BringA culinary arts degree and/or equivalent training with 7+ years in industry and 2+ years of experience in culinary management role in a similar environmentClear and professional written and verbal communication skills Excellent employee relations skills including conflict management, coaching, and problem solvingFlexible, ability to multi-task, and work in stressful situations with shifting prioritiesBasic computer skills including Microsoft Word, Excel, Outlook and other programsDemonstrate the values Accountability, Respect, Creativity, Honesty, Inclusion, and Enthusiasm in all interactions and when performing job dutiesDetail-oriented, reliable, and punctualHighly organizedNecessary State Food Handler s License(s)Native American/Alaskan Native preference applies under applicable TERO requirements
