Job Description

Marriott is seeking a Sushi Cook I to join our culinary team within our global hospitality brand. In this role, you will prepare fresh sushi, sashimi, and rolls to Marriott quality standards, ensuring excellent flavor, presentation, and consistency. You will maintain strict food safety and sanitation practices, manage station setup and prep, and handle seafood properly. Working closely with the broader kitchen team, you'll support smooth service and an outstanding guest experience while building skills for long-term growth in hospitality. Responsibilities Prepare high-quality sushi, sashimi, and rolls following Marriott recipes and standards Ensure proper handling, storage, and rotation of seafood and ingredients Maintain a clean, organized, and sanitary sushi station in compliance with food safety regulations Assist with prep work, knife cuts, and basic sauce and garnish preparation Monitor product quality, portion control, and presentation for each order Coordinate with kitchen and restaurant staff to ensure timely service Follow all Marriott safety, hygiene, and HACCP procedures Support inventory counts and communicate low stock or product issues Provide courteous interaction with guests at the sushi bar when applicable Participate in ongoing training to improve culinary skills and product knowledge Required Skills Sushi preparation and rolling Knife skills (fish filleting and precise cutting) Seafood handling and storage Food safety and sanitation (HACCP) Station setup and mise en place Portioning and plating/presentation Time management in a fast-paced kitchen Basic inventory and stock rotation Understanding of Japanese ingredients and terminology Coordination with back-of-house and front-of-house teams
