OVERVIEW
The Prep Cook supports the Culinary Team by preparing ingredients and food items in advance of service, ensuring efficiency, consistency, and quality across kitchen operations. This role focuses on food preparation, organization, and sanitation, helping the kitchen run smoothly while maintaining BIGHORN Golf Club's high standards for food safety, cleanliness, and teamwork. The Prep Cook works under the direction of the Chef de Cuisine and Executive Chef and plays a vital role in supporting line cooks and overall kitchen flow.
ESSENTIAL DUTIES AND RESPONSIBILITIES
include the following: Food Preparation Prepares vegetables, fruits, meats, poultry, and seafood according to recipes, prep lists, and supervisor instructions. Washes, peels, cuts, trims, portions, and labels food items accurately. Assists with preparation for banquets, special events, and daily service. Follows standardized recipes, knife skills, and portioning guidelines. Properly labels, dates, rotates, and stores prepared items and ingredients. Kitchen Support & Sanitation Maintains a clean, organized prep station and shared prep areas. Cleans and sanitizes tools, cutting boards, prep tables, and equipment. Ensures compliance with food safety, sanitation, and personal hygiene standards. Disposes of food waste and trash according to kitchen procedures. Assists with setup and breakdown of prep stations as needed. Equipment & Safety Operates food preparation equipment safely (slicers, mixers, food processors, etc.). Reports equipment malfunctions or safety concerns promptly. Follows all safety policies, including proper use of PPE and safe lifting practices. Teamwork & Professionalism Works collaboratively with chefs, cooks, and kitchen staff. Demonstrates reliability, punctuality, and a positive team-oriented attitude. Supports kitchen efficiency by assisting other culinary staff as directed. Performs other related duties as assigned.
QUALIFICATIONS

Required Technical / Other Skills and Abilities Ability to follow recipes and verbal/written instructions. Basic knife skills and food handling knowledge. Ability to work in a fast-paced, hot kitchen environment. Strong attention to detail and cleanliness. Dependable attendance and teamwork mindset. Required Licenses/Certifications Valid California Food Handler Card .
