Our menu is centered around charcoal-grilled meats, seafood, and vegetables , and the grill is the heart of our kitchen. We are opening our newest location in San Ramon and are building a disciplined, professional back-of-house team focused on quality, consistency, and execution. Position Summary As a Grill Cook at Meyhouse , you hold one of the most important positions in our kitchen. You are responsible for executing the majority of our main courses using a live charcoal grill , requiring precision, timing, temperature control, and deep product knowledge. You understand that consistency on the grill defines the guest experience and take pride in mastering your craft. Key Responsibilities Operate and manage a charcoal grill during service with precision and control Cook meats, seafood, and vegetables to proper temperature, doneness, and presentation standards Maintain consistent fire, heat zones, and charcoal levels throughout service Follow all recipes, marinades, seasoning, and portioning standards Coordinate timing with sauté, mezze, and expo for smooth service flow Maintain cleanliness and organization of the grill station at all times Follow strict food safety, sanitation, and kitchen safety procedures Assist with prep, opening, and closing duties as assigned Basic Qualifications Minimum 3 years of grill cook experience , preferably with charcoal or live-fire grilling Strong understanding of protein cookery, doneness levels, and temperature control Experience working high-volume service on a hot line Ability to stay calm, focused, and consistent under pressure Strong teamwork and communication skills Availability Requirements Open availability is required Must be available to work weekends and holidays Team members are expected to work scheduled shifts as business needs require Physical Requirements Ability to stand for extended periods in a high-heat environment Frequent bending, reaching, lifting, and repetitive motions Ability to lift and carry up to 50 lbs What We Look For Successful grill cooks at Meyhouse are: Highly disciplined and detail-oriented Confident managing live fire and high heat Consistent with doneness, timing, and presentation Clean, organized, and safety-focused Proud of their craft and execution Benefits Competitive hourly wage based on experience Health, dental, and vision insurance for eligible employees Growth and advancement opportunities within Meyhouse Restaurant Group Discounted employee meals Employee dining discounts Paid sick leave (per California law) Join Our Team If you are an experienced charcoal grill cook who takes pride in precision and consistency, we'd love to meet you.
