Job Description

JOB OBJECTIVE
Under the supervision of the Food Service Management Team, assists in preparing, seasoning, and cooking a wide variety of meats, vegetables, soups, breakfast dishes, and other food items in large quantities. Assists in supporting other employees performing the same or related work.
JOB STANDARDS
The Cook must have: High school education or equivalent; educational courses in food management and production. Comprehensive knowledge of cooking for large groups. Two years minimum institutional cooking experience or equivalent specialized training, and knowledge of meat cutting. Excellent Resident/Customer service skills. A willingness to learn and follow directions. The ability to read, understand, and explain dietary restrictions, alternates, and substitutes. Good overall physical and mental health. Excellent time management skills. Have some knowledge of food preparation and general kitchen operations
Responsibilities:
Follow standard recipes and make independent decisions regarding methods of food preparation. Bake, roast, stew, and steam cook meat, fish and fowl according to recipes; baste to retain flavor. Test cooked food to determine if properly cooked and seasoned, make gravies, stocks, dressings, sauces, and soups. Avoid waste by utilizing foods and leftovers imaginatively, carve, trim and slice meats and poultry skillfully. Direct and assist in daily and scheduled cleaning of equipment and understands departmental established sanitary standards and will report to supervisor any conditions that may violate these regulations. Follow state and federal regulations as outlined in the Home's policies and procedures for Dietary Service, infection control, equipment usage, food storage, food distribution and food service under sanitary conditions. Assure that all Resident rights are maintained reporting issues of concern to administration.
