Duties Prepare and assemble a variety of sushi dishes, including rolls, sashimi, nigiri, and specialty items, ensuring presentation is visually appealing and consistent. Follow established recipes and menu specifications to maintain quality standards across all offerings. Handle raw fish and other ingredients with strict adherence to food safety and sanitation protocols. Maintain cleanliness and organization of the sushi station, including proper storage of ingredients and tools. Assist in menu planning by suggesting new sushi creations based on seasonal ingredients and customer preferences. Monitor inventory levels of seafood, rice, seaweed, and other supplies; communicate needs for restocking. Collaborate with team members to ensure timely service during busy hours while upholding the highest standards of food handling and customer service. Skills Proven experience in food preparation within a restaurant or fine dining setting, specifically with sushi or Japanese cuisine. Strong knife skills with the ability to cut fish and vegetables precisely and efficiently. Knowledge of food safety regulations and proper handling techniques for raw seafood. Experience in menu planning and creating innovative sushi options that appeal to diverse tastes. Excellent food industry knowledge including cooking methods, food presentation, and catering practices. Ability to work quickly under pressure while maintaining attention to detail and quality standards. Familiarity with dietary department procedures and dietary aide experience is a plus for accommodating special dietary needs.
