JOB SUMMARY

Line Cook will work under the direction of the Sous Chef to prepare food that will be used in the café/restaurant, for patient meals and for catering events. This position will also be assigned to prepare grilled or sauté items for café customers and patients.

DUTIES AND RESPONSIBILITIES

Participate in the preparation and service of food for café/restaurant customers, patients, daily specials, and special functions Use food safety techniques in accordance with FDA and Health Department standards, including but not limited to: Proper hand washing Temperature monitoring & recording of all foods & refrigeration Proper storage and handling techniques for food are used (such as labels, dates, covers and first in/first out (FIFO) rotation, etc.) Approved hats or hairnets are worn in food preparation areas Prepare quality food that meets taste and appearance standards Foods will be prepared from standardized recipes making only appropriate and/or approved substitutions. Any changes related to patient modified diets must be approved by a Registered Dietitian Food is plated and displayed to create an appealing presentation Food is prepared for delivery within a timely manner, according to department policy and procedures Be proficient in food preparation skills Must be able to handle a minimum of 15 tickets in 15 minutes Must show and maintain a sense of urgency when performing tasks Show proper and fluent knife sills including cutting, maintenance and cleaning Prepare back stocks to meet patient and customer orders in a timely manner and maintain sufficient levels of stock for all meals during shifts Make sure items are prepared daily and up to established par values and dated with appropriate expiration dates and making sure to pull expiring items and log waste appropriately Pull needed items from the freezer in adequate time to allow product to thaw using proper thawing methods Must maintain stock levels of station and refill/prep as needed Prepare any caterings in an adequate time frame for the food and supplies to be set up prior to the event start time Participate in maintaining the cleanliness of the kitchen and café facilities Use the daily and deep cleaning assignment schedules according to the set requirements of the hospital, District Health Dept, State of Idaho and Food & Drug Administration Maintain equipment utilized in a clean, safe, and sanitized condition Assist any other area of the kitchen or café with tasks as needed Participate in the maintenance of department records Record hot and held food and refrigeration temperatures in temperature logs according to department procedures and policy Use daily production records, recording amounts of prepared food and left over to assist in planning appropriate food quantities Participate in continued education, training and maintenance of Food Handlers' Permits Maintain current Food Handlers' Permit Complete the standard Idaho Falls Community Hospital (IFCH), Nutritional Services Department and position-specific Health Stream educations in a timely manner Participate in intra and interdepartmental meetings Participates in a short Huddle meeting under the direction of the Head Chef and/or Nutritional Services Manager to review important information which is held as needed Attend the regularly scheduled Nutritional Services staff meetings Meetings are mandatory and will count as an absence unless you are excused for vacation or illness/leave If a meeting is missed, the notes from that meeting must be carefully read - it is the responsibility of the individual to seek clarification on any information that is not understood Attend additional meetings as needed Checks emails regularly for any updates/changes throughout the week - abiding by hospital policy of checking email a minimum of twice per week

Qualifications Education/Certification:

High school graduate (or equivalent); Food Handler's Permit (required within 30 days of employment)

Experience:

Minimum 3 years food-service cooking experience required
