Position Overview:
The Culinary Cook is responsible for each resident receiving a nutritious and appetizing meal as ordered by the physician. Food must be handled with care to make sure it does not carry harmful bacteria. Food must be prepared according to recipes, be served in the proper amounts and at proper temperatures. The Culinary Cook is responsible for efficient food production and quality control, under supervision of the Director of Nutrition and Food Services.
Key Responsibilities:
Prepare meals and serve using portion control directives. Make sure all foods are pulled and thawed in proper time and stored properly. Check menus and make sure any pre-preparation in completed. Check daily menus and review daily production sheet with Director of Nutrition and Food Services. Safely operate equipment, making sure it is properly cleaned and sanitized after each use. Report equipment problems as per community policy. Take temperatures of foods for each meal and document. Check daily temperatures of cooler/freezer and document. Record meal substitutions, if applicable. Maintain cleaning schedule to verify proper cleaning is completed on a daily basis and document. Label and date foods and rotate properly. Maintain effective communication with residents, families and community staff. All foods are properly garnished for each meal. Check foods in for accuracy and proper storage. Straighten coolers, freezer, maintain perpetual inventory. Assist with monthly inventories. Participate in departmental quality assurance program
Qualifications:
High school diploma or equivalent. Six months of experience in large quantity food preparation preferred. Must be at least 18 years of age or older.
