Job Description
Position Summary The Dietary Cook is responsible for preparing, cooking, and serving nutritious meals and snacks for residents in accordance with physician orders, therapeutic diets, resident preferences, food safety standards, and facility policies. The Dietary Cook helps ensure quality food service, resident satisfaction, and compliance with federal, state, and local regulations governing long-term care facilities. Essential Duties and Responsibilities Food Preparation and Service Prepare meals, snacks, and nourishments according to approved menus and recipes. Follow therapeutic and modified diet orders as prescribed. Prepare food in appropriate quantities to meet resident needs. Ensure meals are attractive, palatable, and served at proper temperatures. Assist with tray line and meal service operations. Prepare special meals for resident events and activities as directed. Food Safety and Sanitation Follow food safety and sanitation regulations at all times. Maintain proper food temperatures during storage, preparation, and service. Complete required temperature logs and documentation. Practice proper hand hygiene and infection prevention procedures. Maintain cleanliness of kitchen equipment, utensils, and work areas. Follow procedures for food storage, labeling, and dating. Dietary Compliance Follow physician-ordered diets and texture modifications. Work closely with dietary staff, nursing staff, and consulting dietitian. Ensure compliance with CMS requirements, Kentucky regulations, and local health department standards. Inventory and Equipment Assist with receiving and storing food and supplies. Monitor food inventory and report shortages. Properly operate kitchen equipment. Report equipment malfunctions or safety concerns immediately. Resident Service Promote resident satisfaction through quality food preparation and service. Accommodate resident preferences within dietary guidelines. Respond courteously to resident and family concerns regarding meals. Safety Follow workplace safety procedures. Use equipment safely and appropriately. Report accidents, injuries, and unsafe conditions promptly. Participate in emergency preparedness procedures. Qualifications High school diploma or equivalent preferred. Previous cooking experience in healthcare, long-term care, restaurant, or institutional food service preferred. Knowledge of food preparation techniques and food safety practices. Ability to read recipes, menus, and diet orders. Strong communication and teamwork skills. Physical Requirements Ability to stand and walk for extended periods. Ability to lift, push, and pull up to 50 pounds. Ability to work in hot and fast-paced kitchen environments. Ability to bend, reach, stoop, and carry supplies.
