JOB DESCRIPTION FOR BY ALL MEANS
Position Title:
Line Cook Reports to: Executive Chef Job Brief Prepare food to the chef's exact specifications and to set up stations for menu. Line cook duties will consist of assisting the executive and sous chef with their daily tasks. The successful candidate will play a key role in contributing to our customer satisfaction and acquisition goals. Responsibilities Inspect and clean food preparation areas, such as equipment and work surfaces, or serving areas to ensure safe and sanitary food-handling practices. Set up station according to company guidelines. Restock all items before next shift. Assist with cleaning, sanitation, and organization of kitchen, walk-in coolers, and all storage areas. Perform the required shift change. Ensure food is stored and cooked at correct temperature by regulating temperature of ovens, broilers, grills, and roasters. Ensure freshness of food and ingredients by checking for quality, keeping track of old and new items, and rotating stock. Turn or stir foods to ensure even cooking. Season and cook food according to recipes, follow portion control. Weigh, measure, and mix ingredients according to recipes, using various kitchen utensils and equipment. Portion, arrange, and garnish food, and serve food to waiters or patrons. Observe and test foods to determine if they have been cooked sufficiently, using methods such as tasting, smelling, or piercing them with utensils. Wash, peel, cut, and seed fruits and vegetables to prepare them for consumption. Perform other duties as assigned by the Executive Chef, Sous Chef, or Lead Line Cook. Requirements Understanding of various cooking methods, ingredients, equipment and procedures Familiar with industry's best practices Knowledge Required For Satisfactory Job Performance Production and Processing — Knowledge of raw materials, production processes, quality control, costs, and other techniques for maximizing the effective manufacture and distribution of goods. Customer and Personal Service — Knowledge of principles and processes for providing customer and personal services. This includes customer needs assessment, meeting quality standards for services, and evaluation of customer satisfaction. Food Production — Knowledge of food products (both plant and animal) for consumption, including storage/handling techniques. Critical Thinking — Using logic and reasoning to identify the strengths and weaknesses of alternative solutions, conclusions or approaches to problems. Active Listening — Giving full attention to what other people are saying, taking time to understand the points being made, asking questions as appropriate, and not interrupting at inappropriate times. Inspecting Equipment, or Material — Inspecting equipment, or materials to identify the cause of errors or other problems or defects. Resolving Conflicts and Negotiating with Others — Handling complaints, settling disputes, and resolving grievances and conflicts, or otherwise negotiating with others. Communicating with Supervisors, Peers, or Subordinates — Providing information to supervisors, co-workers, and subordinates by telephone, in written form, e-mail, or in person. This position must be willing to work with other employees as a team to accomplish company goals.
