The Role:
As our Assistant Kitchen Manager / Lead Line Cook, you will be the anchor of our daily operations—working side-by-side with our team to uphold our high standards of quality and consistency. You will split your time between leading the line during high-volume rushes and handling crucial backstage kitchen operations.
Key Responsibilities:
Line Execution & Leadership:
Run and anchor the line during busy lunch, dinner, and weekend rushes, setting the pace and ensuring every plate that leaves the window meets Sam B's standards.
Kitchen Sanitation & Standards:
Oversee and maintain strict cleanliness, food safety, and organization standards throughout the entire kitchen.
Scheduling:
Assist with or manage staff scheduling to optimize labor costs and ensure proper shift coverage.
Mentorship & Quality Control:
Help train line cooks, monitor prep levels, and ensure consistency across our scratch-made menu items.
Leadership Development:
Learn the business side of the kitchen—including inventory, ordering, and kitchen administration—with the explicit goal of stepping up to run the kitchen in the future.
What We're Looking For:
Proven experience working in a fast-paced, professional kitchen (strong line cooking and background leadership experience required). A strong work ethic and a "lead by example" mentality during high-volume rushes. Organizational skills (experience with scheduling or inventory management is a major plus).
Ambition:
